This dish was invented to use up stale bread, and that is still why it works better with it: dry bread soaks up the egg mixture without turning to mush. Fresh bread falls apart. Let the slices soak for half a minute a side, no longer, and fry over medium heat in butter.

Beat the eggs with the milk in a deep plate.
Mix the sugar with the cinnamon in a small bowl.
Dip the slices of bread in the egg mixture and let them soak through properly.
Fry them in butter for 2 minutes a side, until golden.
Dust straight away with the cinnamon sugar and serve with icing sugar.
A splash of vanilla or a pinch of cardamom in the egg mixture makes an immediate difference. Brioche or croissant instead of plain white bread lifts them to dessert level. Mix the cinnamon sugar yourself at one part cinnamon to four parts sugar. They have to be eaten warm, cold they turn leathery.
