Dutch Semolina Pudding with Berry Juice

20 min Easy Vegetarian 359 kcal 11.6 g protein

Semolina pudding with berry juice comes from the days when desserts were made of milk, and it is still one of the cheapest there is. Keep stirring the whole time the semolina is in the milk, because it sinks to the bottom and catches the moment you turn away.

Tips from RandomRecept
  • Keep stirring while it cooks, otherwise the semolina goes lumpy.
  • Rinse the mould with cold water and the pudding slides straight out.
  • Good with a spoonful of whipped cream or some fresh red fruit.

Variations and storing

Vanilla or lemon zest through it takes the milky edge off. Swap the berry juice for homemade berry compote or a red fruit coulis. The pudding sets in the fridge and needs at least three hours. Rinse the mould with cold water first and it slides straight out.
