Salmon needs very little, and that is exactly why this dish works. Lay it skin side down in a hot pan and leave it alone until the skin lets go, that is when it turns crisp. The fish is done when the middle is still just translucent, because it carries on cooking on the plate. Salmon cooked all the way through is dry salmon.

Preheat the oven to 200°C.
Cut the broccoli into florets and toss with olive oil, garlic, salt and pepper.
Put the salmon and broccoli on a baking tray and drizzle the salmon with lemon juice.
Bake for 15 to 18 minutes, until the salmon is cooked through.
Serve straight away with an extra wedge of lemon.
Swap the broccoli for green beans or asparagus, same method. A spoonful of honey with the lemon juice gives a sweet and salty glaze. Leftover salmon is lovely cold through a salad the next day, but do not reheat it in the pan: it dries out and starts to smell strong.
