Warm porridge is winter breakfast in the most literal sense: cheap, filling and ready in ten minutes. Cook it in milk rather than water, it makes an enormous difference to flavour and texture. The apple goes in halfway, so it softens without falling apart completely.

Bring the milk and oats gently to the boil in a small pan.
Meanwhile, cut the apple into small cubes.
Stir half the apple and the cinnamon through the porridge and let it simmer for 5 minutes.
Spoon into a bowl and top with the rest of the apple, the walnuts and honey.
Pear works just as well, as does a handful of raisins that plump up while it cooks. Walnuts give the bite the porridge itself lacks, toast them dry in a small pan before scattering them on. Porridge thickens as it stands, so always add a splash of milk when reheating.
