Fish in a parcel cooks in its own steam and is almost impossible to ruin: it does not dry out and the pan stays clean. Slice the courgette thinly, because it needs longer than the fish. Fold the paper or foil loosely so air stays inside, because that is what the steam circulates in.

Variations and storing

Any firm white fish works, and salmon does too. Lemon, dill and garlic are the base, but a splash of white wine or some capers change it completely. You can make these parcels ahead and keep them in the fridge until baking, handy when people are coming round.
