A lasagne without mince needs something to fill the gap, and here that is the ricotta. It makes the layers creamy where the tomato sauce alone would only be sharp. Fry the courgette and pepper beforehand so they lose their moisture, otherwise you end up with a puddle in the bottom of the dish.

  • Frying the courgette briefly first drives off most of the moisture.

Variations and storing

Aubergine, spinach or roasted squash fit in just as well. A layer of bechamel on top instead of cheese alone makes it more classic. Lasagne is easier to cut the next day than straight from the oven. Either way, let it rest ten minutes before cutting so it does not collapse.
